Why are Flamingos Pink?

I received a forwarded e-mail about eating too much carrots will turn your skin orange. That reminds me of why flamingos have their pinkish or redish in color. Just because of what they eat, the beta-carotene that is also available in carrots. Now, I remember the French phrase:

"You are What You Eat"
"Dis-moi ce que tu manges, je te dirai ce que tu es."
[Tell me what you eat and I will tell you what you are].

I have also heard that flamingos are pink due to what they eat.
